Peeling garlic

Peeling garlic can be a problem. One way is to flatten each clove on a cutting board with a cleaver or heavy kitchen knife. Or pour hot water over the cloves for just a few seconds to loosen the skins so they can be pulled off easily with a paring knife.

The cloves may also be soaked in cool water for half an hour before peeling. Or put in a microwave oven for 5 seconds or so.
