SIMPLE SAUTE OF CORN, HAM, & PINE NUTS

John Gottfried, co-owner of Gourmet Garage, calls his textured creation `one of the world's greatest dishes.'

1 cup corn, right off the cob (about 3 ears, depending on size)

1/2 cup smoked ham or smoked turkey, cut a quarter-inch, then diced to be same size as corn

1/4 cup toasted pine nuts

1 teaspoon butter

Salt and freshly ground black pepper

Melt butter in a frying pan. In the same pan, saute ham and corn for about 2 minutes over medium heat. Toss in toasted pine nuts. Season with freshly ground black pepper and salt to taste. Serve immediately. Serves 2.
