When to stop harvesting herbs

Harvest annual herbs until frost. But with perennial herbs -- those that return year after year -- you want to give them the opportunity to harden off and prepare for the winter cold. So it's best to stop pinching or harvesting them in mid-August for Zones 7 and colder.
