The acid test for tomatoes

Are yellow and orange tomatoes really lower in acid than red tomatoes, as is often believed?

No, says Linda Sapp, owner of Tomato Growers Supply Co. in Fort Myers, Fla.

In fact, she adds, "when scientists have analyzed tomatoes, they have found that sometimes yellow and orange tomatoes have an even higher acid content [than red types]."

They taste sweeter (or less acidic) than red varieties because they have a high sugar content.
