LA CASA SENA BLUE-CORN MUFFINS

Blue corn meal is available at some gourmet and specialty stores. It is also available by mail (see note at bottom of far-left column).1/2 lb. sweet (unsalted) butter 1/2 cup sugar 5 eggs 1 cup roasted, peeled, seeded, and stemmed long green chilies, chopped (frozen green chilies may be used instead of fresh) 1 cup fresh yellow corn off the cob, cooked 1 cup grated cheddar cheese 1 cup grated jack cheese 1 cup flour 1 1/2 cups blue-corn meal 1 teaspoon baking powder (non-aluminum type) 1 teaspoon salt Cream first four ingredients. Mix in the rest. Put in well-greased muffin tins and bake for 20 minutes. Makes about 2 dozen muffins. Note: To roast chilies, set them under broiler for a few moments till the skin starts to blister and peel away. Carefully peel, seed, and de-stem.
