For four decades Irving Penn has set a standard for photographic versatility in portraiture, fashion, and other fields. The platinum-palladium print of S.J. Perelman is from a current retrospective exhibition of about 200 photographs, including the gelatin-silver print of Ballet Theater (1947) and the platinum-silver print entitled ''Collapse'' (1980). Organized by John Szarkowski of the Museum of Modern Art, where it remains until Nov. 27, the show will travel through the summer of 1986. The itinerary is Milwaukee, Wis., Detroit, Mich., Berkeley, Calif., Washington, D.C., and Fort Worth, Texas.
