Cabbage and apples combine in a casserole

Apples are currently being harvested in most of the apple producing areas of the States. To select apples, choose those that are firm, free from bruises, and heavy for their size.

Here is a recipe that will make a hearty vegetable dish for a cool fall day. Cabbage Noodle Apple Bake 6 Cups shredded cabbage 2 cups peeled, thinly sliced cooking apples 3 tablespoons butter 1 8-ounce package wide noodles, cooked 2 cups low-fat cottage cheese, or ricotta cheese 1 egg, beaten 1/2 teaspoon cinnamon 1/4 teaspoon nutmeg 1/4 teaspoon pepper

In a large skillet, saute cabbage and apples in butter until tender, about 15 to 20 minutes. Add noodles and toss through. Combine cottage cheese, egg, cinnamon, nutmeg, and pepper; add to cabbage mixture and toss through. Pour into greased casserole.

Top with additional cinnamon and nutmeg if desired. Bake at 350 degrees F. for 30 minutes, or until top is lightly browned. Makes 6 to 8 servings.
