Orange Fool

A "fool" is a famous dessert dating back to Tudor England. It is made of fruit and cream or soft custard. Made famous by Boodle's, one of London's renowned men's clubs, it takes a mere 25 minutes to prepare and 1 hour for chilling. Orange Fool Juice of 4 oranges, sieved Juice of 2 lemons, sieved Grated rind of 1 lemon 3 tablespoons honey 2 cups heavy cream Pinch of salt 12 to 18 large ladyfingers

In a mixing bowl, combine all ingredients. With a rotary beater, beat the mixture until thick and frothy. Line a glass or silver serving bowl with ladyfingers. Spoon the cream mixture into the center. Chill 1 hour before serving. Serves six.
