Knead It, Punch It, Bake It: Make Your Own Bread, by Judith and Evan Jones. Illustrated by Lauren Jarrett. New York: T. Y. Crowell Junior Books. 113 pp. $10 .50.

Tuesday afternoon became the high point of my week during the summer when I was 12. That was when I went to a friend's house to learn to bake. I still remember the chocolate-frosted cakes and jelly rolls, but we never tried breads. A delightful new book, ''Knead it, Punch it, Bake it!'' makes me want to return to that summer and try again - this time - some of these 30 recipes for breads.

Authors Judith and Evan Jones speak directly to young cooks with specifics about measuring ingredients, handling dough when your hands are small and the dough tough and sticky, waiting for the dough to rise, punching it down, forming loaves, and using an oven.

Boys and girls will have a great time cooking yeast breads, Hush Puppies, doughnuts, and muffins - and the whole family will enjoy munching.
