Storing fresh fruits and vegetables properly is the key to getting the most from fresh produce. A room temperature below 70 degrees F. is best for cucumbers, eggplants, peppers, ripe tomatoes, citrus fruits, bananas and other tropical fruits and watermelons.
The cooler temperature provided by refrigeration are also recommended for strawberries, peaches, apples, carrots, sweet corn and green leafy vegetable such as lettuce and spinach.
Bananas are sensitive to cool temperatures and will be injured in ripening in temperatures below 55 degrees F. Therefore do not store them in the refrigerator.
The ideal temperature for ripening bananas is between 60 degrees F. and 70 degrees F. High temperatures cause them to ripen too quickly.
Place them on a dish and allow them to ripen at room temperature to the stage you prefer, then refrigerate.
The skin will turn brown but the flesh will keep well for a short time.
