Potato cheese puff to accompany meats

The potato has long been a staple food in this country as well as countries throughout the world. Today there are three types commonly available for use. They are new potatoes, general purpose potatoes, and baking potatoes, general purpose potatoes, and baking potatoes.

Store potatoes in a cool, dark place that is well ventilated. No matter how they are to be cooked, first remove any sprouts and cut off any green portions. Gently scrub potatoes under running water with a vegetable brush to clean them. Leave the skin on during cooking to help prevent loss of nutrients.

Here is a simple, delicious recipe that can be adapted for any number of guests and will make a good accompaniment to roast meal or poultry. Potato Cheese Puff 3 egg yolks, beaten 1/4 cup milk 3 cups mashed potatoes, seasoned 1 Teaspoon chopped onion 1 tablespoon parsley, chopped 2 cups cheese, coarsely shredded 3 egg whites, stiffly beaten

Preheat oven to 375 degrees F. Grease a 2-quart baking dish. Combine egg yolks and milk. Add remaining ingredients except egg whites; beat well. Fold egg whites into mixture. Put in baking dish. Bake 40 to 45 minutes or until a knife inserted in the center comes out clean and the top is browned. Serve immediately. Serves 6.
