3/4 cup heavy cream
12 ounces high-quality bittersweet or semisweet chocolate (finely chopped)
1 teaspoon vanilla, peppermint, or orange extract
1. Heat cream to simmering in a medium saucepan; do not let it boil. Lower heat and add the chocolate, stirring constantly until the chocolate has melted. Add one of the flavored extracts (or ginger, candy cane, nuts, pepper) and whisk until the mixture is smooth.
2. Transfer to a fondue pot and keep warm with burner. Use one or all of the following for dunking:
