It's been nearly two decades since Deborah Madison introduced her "Vegetarian Cooking for Everyone." This updated volume takes into account new practices and culinary preferences that have evolved in vegetable-based cooking since then. "We were not eating kale salads at all during the seven years when I was writing 'Vegetarian Cooking for Everyone;' now they're everywhere," Madison writes in the introduction.
