White Soda

More like a sweet cake than a traditional soda bread, this makes excellent toast.

2 cups all-purpose flour

4 tablespoons sugar

1/2 teaspoon baking soda

1-1/2 teaspoon baking powder

1-1/4 cup golden or dark raisins

1 cup buttermilk

1/2 stick melted, unsalted butter

1 egg

Pinch of salt

Preheat oven to 375 degrees F. and grease a standard 8-1/2 inch loaf pan.

Combine dry ingredients in large bowl. Add raisins and mix evenly.

In smaller bowl, whisk buttermilk, butter, and egg and add to dry ingredients. Stir mixture briefly and then knead until sticky.

Scrape dough into buttered loaf pan and spread evenly. Bake for 45 minutes or until a toothpick tester pierced into loaf comes out clean.

Let loaf cool in pan for 10 minutes and then turn out to cool on a rack.

Makes 1 loaf.
