Flo's Smothered Chicken

3-1/2 to 4 pounds of chicken pieces

1 teaspoon salt

1/2 teaspoon ground pepper

1/2 cup flour

2 tablespoons vegetable oil

1 stalk celery, diced

2 large onions, sliced

2 cloves garlic, minced

1/2 teaspoon dried thyme

2 cups chicken broth

Place chicken, salt, pepper, and flour in a large paper bag; shake well. Remove chicken. Save two tablespoons of the seasoned flour.

Heat oil in a large skillet that has a cover. Add chicken and brown over medium heat for about 20 minutes, turning occasionally. Stir in seasoned flour. Cook until flour is lightly browned.

Add celery, onions, and garlic and saute for 5 minutes. Add thyme and chicken broth. Stir, bring to a boil then reduce to low heat, cover and simmer for 25 minutes or until chicken is fork-tender.

Serves 4 to 5.
