Pork chops baked in orange juice

With the cooler weather comes the desire for warm, hearty, and satisfying foods. Pork chops fall into that category, and seem to combine well with fruit, often apples, but in this case, oranges.

Cooked in orange juice, the chops will stay tender and the addition of honey and orange slices at the end sweetens the dish. Serve with plain, fluffy rice and a crisp green vegetable. Orange Pork Chops 6 pork chops, 3/4-inch thick Salt and pepper Milk Flour 3 tablespoons butter 1/2 teaspoon allspice 1 teaspoon grated orange peel 3/4 cup fresh orange juice 1 teaspoon fresh lemon juice 2 tablespoons honey 2 oranges, peeled and sliced in 3 thick cartwheels each

Season chops with salt and pepper. Dip in milk, coat with flour. Brown well in hot butter, drain off fat and transfer chops to baking dish.

Mix remaining ingredients together and pour over chops, except honey and orange slices. Tightly cover and bake at 350 degrees F. for 35 minutes. Uncover and bake 10 minutes.

Stir honey into pan drippings along with liquid from baking dish. Bring to a boil. Add oranges, glazing 1 to 2 minutes on each side. Serve over chops. Rice goes well with this dish. Serves 6.
