How to keep good knives sharp

Perhaps the most basic and essential kitchen tool is a set of sharp knives, which, if well-maintained, can be a long term investment. Regular maintenance will protect your knives, keeping their cutting edges.

Daily care involves using a sharpening steel before you use your knives each time, and professional sharpening every six to eight months. It is also recommended to wash and dry knives by hand to protect bo th the blades and handles.
