As the temperature and humidity rise, there seems to be more and more demand for thrid-quenching coolers. Lemonades, fruit coolers, and other icy concoctions are easy to put together now when oranges, lemons, and grapefruit are in good supply.
Here is a recipe that combines the seasonal fruits in refreshing results for hot summer days. Citrus Cooler Juice of 3 fresh oranges (1 cup) Juice of 1 fresh lemon 1 can (6 ounces) unsweetened pineapple juice 1 can (6 ounces) apple juice 1 can (12 ounces) lemon-lime flavored soda, chilled Ice cubes Orange and lemon slices
In pitcher combine fruit juices and soda. Add ice, orange, and lemon slices and stir well. Makes about 4 cups or 8 4-ounce servings.
To make cartwheel slices of orange and lemon, for garnish, cut a round slice from ends of unpeeled fruits. Cut a slit in slice, from peel edge to center, and place on rim of serving glass.
To make lemon peel twist for garnish, using a lemon zester or vegetable parer , peel with a downward motion from stem to blossom end. Twist the lemon peel to release fragrance and drop into beverage.
Use these lemon peel twists to make ice cubes by placing one in each section of an empty ice cube tray, then fill with water and freeze. These are especially good in lemonade, soda and sparkling mineral water.
